Ingredients:
White or green radishes from the growers at the Beijing Organic Farmers’ Market
Soy sauce (optional)

Method:
1. Wash the radishes thoroughly; do not peel them.
2. Cut into finger-sized sticks.
3. Pour a little soy sauce into a small dish and place it beside the radish.

Notes:
The skin does not taste odd; peeling it actually strips away the flavour.
Avoid slicing too thinly; a thicker cut preserves the sweet, refreshing crunch.
