Ingredients:
Daikon or green radish from the farmers at the Beijing Organic Farmers’ Market
Soy sauce (take it or leave it)
Method:
1. Wash the radish; do not peel it
2. Cut into strips about the thickness of a finger
3. Pour a little soy sauce into a dish and set it beside the radish
Notes:
The radish skin is not unpleasant — peeling it only robs you of flavour.
Do not slice thinly: a thick-cut is what delivers that clean, sweet satisfaction.
