At the Beijing Organic Farmers’ Market, radishes from different growers each carry their own distinct character. Different soils, different methods, different flavours—but they all share one thing: they taste wonderful. The preparation is wonderfully simple, so why not give it a go today?
Ingredients:
White or green radish from growers at the Beijing Organic Farmers’ Market
Soy sauce (optional)
Method:
1. Wash the radishes thoroughly, but leave the skin on.
2. Cut into thick sticks, roughly finger-width.
3. Drizzle a little soy sauce onto a small plate and place it alongside the radishes.
Notes:
Radish skins aren’t bitter or unpleasant; peeling them actually strips away valuable flavour.
Don’t slice them too thinly. Thick cuts deliver that satisfying, sweet crunch.
